Who else loves a delicious AND healthy homemade muffin recipe?
So before we dive in, do you love muffins but feel guilty after eating one? These homemade healthy muffins are packed with real ingredients that taste good AND feels good!
Lately I have been obsessed with adding GINGER to my homemade recipes and it’s been a game changer! This powerful delicious condiment that we should be incorporating into our DAILY nourishment menus.Â
This anti-inflammatory & antioxidant powerhouse is available to us in all forms and can be used in different ways.
Why should we be adding ginger to support our health?
Here are a few reasons::
-The taste is refreshing and energizing in itself.
-Supports our immune system in the detoxifying process (helps fight off bacteria and fungus).
-Aids with our digestion.
-Is packed with nutrients and vitamins like potassium, magnesium, phosphorous, iron, B6, vitamin C, just to name a few.
-Alleviates pain and discomfort from its anti-inflammatory power (includes menstrual pain tooooo you know ;)).
Alright that’s enough of why we should have ginger on hand in our homes now let’s dive into my favourite ways to incorporate it!
Teas are a great way to incorporate more ginger into your routine.
Adding it in our soups gives it that little subtle kick and spice we are craving.Â
Adding it to our baking gives it that twist and fun we all need more of! Â
From fresh to ground to tinctures to essential oils, ginger is an easy and affordable health supporter we should be taking more advantage of!!
Oh and here is a recipe I created that includes a nice subtle kick of ginger that I have been enjoying with my family this week!
​Healthy Muffin Recipe
PALEO, GRAIN FREE, SUGAR FREE, KID FRIENDLY
Makes 12 cute little muffins.Â
Ingredients
Dry ingredients
-1 cup of almond flour
-¼ cup of coconut flour
-¼ cup of ground flax
-1st of baking soda
-2 tsp of cinnamon
Wet ingredients
-3 eggs
-2 tsp of vanilla extract
-1 cups of cooked pumpkin or shredded carrots
-1 inch of fresh ginger grated
-6 pitted dates broken up in pieces
Instructions
-Preheat oven to 375
-Prep muffin pan with oil or with silicone muffin holders (MY FAV here:Â https://amzn.to/3fSHjtY
-Mix together the wet ingredients in a bowl and the dry ingredients in a another bowl. After that, mix in the dry ingredients with the wet ingredients
-Lastly, add the muffin mix evenly in your muffin pan and bake for about 20 minutes.
-Enjoy with some ghee, nut butter or plain for breakfast, snack or desert!
Ginger is a GREAT add on to your cooking from muffins, to lattes, to smoothies, to soups to anywhere you want to boost up!
