Health Hack: Eat veggies at every meal, yup even breakfast!
Adding more VEGGIES into your day adds more HEALTH to your day 🙂
So why skip breakfast?
Why wouldn’t you add some veggies in the morning to kick start your day with nourishment?
I get it, you’re maybe thinking well I don’t feel like eating raw broccoli when I first wake up and you don’t need to!
You GET to eat your veggies AND enjoy your first meal of the day 🙂
There are LOTS of ways you can fold in a big dose of vegg for breakfast, here are my top 5 ways of doing so:
- Smoothie packed with spinach, cucumber, and or kale. Add some frozen fruits, some protein powder or yogurt, and anything else you feel called to and enjoy.
- Anything with eggs…
- Pancakes. Add a handful of spinach to your regular pancake mix and voila!
- Homemade muffins/ cookie muffins. Fold in some shredded carrots or some shredded zucchini to your muffin recipe and your all set- check out one of my muffin recipes here:

- Last but NOT least my favorite and weekdays go-to is the Cauliflower Buckwheat Bowl.
I prep a huge batch of this on Sundays and I am ALLL set for a productive week 🙂
CAULIFLOWER BUCKWHEAT BOWL RECIPE
WHAT YOU NEED
- 1 pack of buckwheat groats OR 1 ½ cups of buckwheat groats
- 2 cups of filtered water
- 1 pack of frozen cauliflower rice
- 2 tbsp each of ground flax seeds, chia seeds, and hemp seeds
- 1 tsp of vanilla extract
- 2-3 tbsp of cinnamon
Optional add-ons to individual portion
- 1 portion of maca root powder
- 1 scoop of protein powder of choice
- Berries (frozen or fresh)
- Fruit of choice (diced apple, banana, pear,…)
- Nut butter (tucked in on the side of your bowl)
- Sweetener of choice (Honey, Maple syrup, coconut sugar…)
- Granola (to add on top for an extra crunch)
Instructions
- Add buckwheat groats with water to pan on high heat until it boils.
- Bring heat down to medium heat and cook until water is to a minimum and groats are easy to break (follow cooking instructions of package).
- Now mix in your frozen cauliflower rice and cook on low until everything mixes well together.
- Turn off the burner and add your flax, chia, and hemp seeds.
- Let everything cool down for a few minutes add your spices, and vanilla extract and that’s it!Â
- Add some extras of choice (see list above). Make it your own and mix it up depending on what you have on hand and what you feel like eating.
- Store in a large container in the fridge for up to 5 days.
- ENJOYYYY a healthy, yummy, and EASY breakfast any day of the week 😉
